Pita Bread

Ingredients

  • 1 pkg of dry active yeast (2 ¼ tsp)
  • 1 cup warm water
  • 1 cup all-purpose flour to start. 1 ¾ to 2 cups to build dough
  • 1 ¾ teaspoons of salt
  • 1 ½ tablespoons olive oil

Instructions

  1. Add 2 ¼ tsp of yeast to stand mixer bowl
  2. Add 1 cup of water
  3. Add 1 cup of flour
  4. Stir
  5. Let sit for 15-20 minutes to proof
  6. Add 1 ½ tablespoons of oil
  7. Add 1 ¾ tablespoons of salt
  8. Add about 1.5 cups of flour
  9. Mix and check consistency. If too wet, add a little more flour. If too dry, add a little more water.
  10. Mix with dough hook for about 5-8 minutes until dough is spongy and bounces back.
  11. On work surface, roll dough into a ball.
  12. Drizzle oil in mixer bowl and roll dough ball to coat the dough and bowl with oil.
  13. Cover and let rise for 2 hours or until doubled in size.
  14. Remove from bowl on floured surface.
  15. Flatten by hand into a uniform shape and cut into 8 equal pieces.
  16. Form 8, small, round loaves.
  17. Cover and let rest for 15 minutes.
  18. Take one of the round loaves and pat flat. Roll out until approximately ¼” thick and about the size of a normal pita.
  19. Let pita rest for 5 minutes.
  20. Drop pita onto cast iron skillet that’s warmed to medium-high and coated with oil.
  21. Cook on each side for about 3 minutes
  22. Flip back over to original side and it should begin puffing.
  23. Repeat for remaining pita loafs.
